Sunshine lollipops and rainbows in the sky


Good morning everyone
Yet another glorious sunny day,hurrah!It's almost like being on holiday,long may it last!
This weekend I had a bash at recreating a tempting looking Tiramisu I found in one of my Nigella cook books. This recipe uses Bailey's instead of Marsala wine mixed with instant espresso coffee made with boiling water and cooled.This is where the lady fingers/boudoir biscuits or savoiardi biscuits are dipped into yum yum yum. A very simple recipe which I like, nice and quick then pop it into the fridge,no oven time needed yay! The longer it's left in the fridge the nicer the flavour,it's science!
Unfortunately I never got a chance to take a picture before it was hoovered by Mr. Ben and various family members and myself of course. It went down an absolute treat and FYI it makes a delicious breakfast,it is a pick me up after all so I'm guessing it'd be a great hangover cure too :D
I also bought the cutest little ice-cream bowls in Dunnes,I just couldn't resist.The bright coloured insides and matching spoons!!!When I brought them home I made up some Angel Delight and combined the awesomness of the bowls and the mousse and this was the outcome. Aren't they super pretty! Again just pop in the fridge and wait for the mousse to set then devour nyom nyom nyom! So today being Father's Day I had planned on making Dadd'ys favourite, gingerbread cake with lemon icing but change of plan as I don't have half the ingredients I'd need so going to have a read through my latest baking book called 1001 cupcakes,cookies and other tempting treats and see what I find. Of course I can sit in the sun,work on my tan AND find a recipe.Multi-tasking rules.
Cheerio and happy sunbathing and give your annoying father a break,just today,even for an hour,might not deserve it but do your best :D x

Good afternoon everyone!
What a glorious day eh?I had a wonderful afternoon yesterday, treating myself to a decent haircut, buying hilarious birthday cards and I received the most amazing pair of blue aviator sunglasses from my sister,thanks Lindy Lou!!I went for a lovely walk along the seafront with Mr.Ben, no not the cartoon character from the amazing TV show but my German companion :D
Anyways enough about me,back to baking. This afternoon I am making a lemon drizzle birthday cake for one of my colleagues in work. A nice simple cake to make but very effective and lemony fresh and gooey and super tasty.It's one of my favourites. I'll cover it with a nice lemon syrup and when cooled cover it in a lemon icing.DELICIOUS! and nice and light to gobble in this fine weather. There goes the oven timer,back to work I go then out to the sunshine yay
